Cognac distillation comprises of a dual-stage cooking process as means to convert locally-sourced wine into consumable alcohol. A unique copper still – referred to as a Charentais Copper Still – is used to slowly bring wine up to boiling temperature. The alcoholic vapors are sent through a condenser and return as a liquid. This first round of distillation is known as “brouillis” and is split into three parts:
Primary liquid during distillation and has a very high alcohol content.
Commonly referred to as “brouillis” as well, this is the bulk of what will become cognac.
The latter portion of the distillation process.
The Head and Tails are reincorporated into the next round of distillation whereby the whole process is repeated.
